Tasting Notes: Pepper, slightly winey
Suggested roast profile: Sometimes the earthiness Nicaraguan beans tend to lead to a lot of acidity and winey-ness, but I find these beans to be quite pleasant. Roast medium to medium dark, but don’t go too dark or they take on an alkaline taste. I recommend to the high end of medium to take out some of the acidity but retain the rich flavor.
